Candy-Making Notes:

For authentic burfi, use ghee, or Indian clarified butter, instead of regular melted butter. Edible silver foil, called varakh, varak, or vark can be found at Indian groceries or online.

Recipe:

1 cup blanched almonds

½ cup milk

½ cup condensed milk

6 tablespoons unsalted butter, melted

½ teaspoon almond extract

Silver foil or slivered almonds for decorating

Line an 8-by-8-inch pan with foil and butter it well.

In a food processor or blender, grind blanched almonds to a fine powder. Add milk and mix into a fine paste.
